You need:

  • 1 cup butter, softened
  • 1 cup sugar
  • 4 eggs
  • 1 can (20 ounces) unsweetened crushed pineapple, drained
  • 5 slices white bread, cubed

What to do:

 

  1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in pineapple. Gently fold in bread cubes.
  2. Spoon into a greased 2-qt. baking dish. Bake, uncovered, at 350° for 35-40 minutes or until a thermometer reads 160°. Serve warm.

You need:

  • 2 cups baby carrots
  • 1 can (20 ounces) pineapple chunks, undrained
  • 4 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup packed brown sugar
  • 1 tablespoon butter

What to do:

 

  1. In a saucepan, bring 1 in. of water to a boil; place carrots in a steamer basket over water. Cover and steam for 8-10 minutes or until crisp-tender. Drain pineapple, reserving juice; set pineapple aside.
  2. In a saucepan, combine cornstarch and cinnamon. Add the brown sugar, butter and reserved juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the carrots and pineapple; heat through.

  • 1/4 cup cold milk
  • 2 cups vanilla ice cream
  • 1 can (5-1/2 ounces) unsweetened pineapple chunks, undrained

In a blender, combine all ingredients; cover and process until smooth. Pour into chilled glasses; serve immediately. Yield: 3 servings.
